Week 6 Course Recap: Making Sourdough Sandwich Bread

Tips I shared in the live:

  • For the same day option, use 150 grams of starter. For the overnight option in warmer months, reduce the starter to 125 grams and use cooler liquids to help slow down the rise.
  • Avoid adding extra flour at the beginning. Knead for a few minutes first to let the gluten develop. As the dough strengthens, it should naturally become less sticky. If it’s still very sticky at that point, add a little more flour until it’s just tacky.
  • You can add whole wheat flour to this recipe or replace it with more bread flour, depending on what you prefer.
  • Avoid the temptation of adding more flour at the beginning. Knead for a few minutes to let the gluten develop. As the dough becomes stronger it should become less sticky. If it is still really sticky at that point then you can add a little more flour until it is just tacky.
  • In this recipe you can add whole wheat or just replace it with more bread flour depending on what you are wanting.
  • After slicing the bread I like to make homemade uncrustables to store in the freezer. To do this, add peanut butter and jelly between two slices and then either leave them as is or cut them with a Sandwich Cutter. Wrap each sandwich in plastic wrap and then store all of them in a freezer-safe bag. In the mornings I just grab a frozen one to put in their lunch and it's defrosted by lunch time.
